Ways to Use Roasted Vegetables
A question I get a lot from my clients is, "how can I add more vegetables into my diet?"
Vegetables can be tough to add in, especially if you are a little picky with flavors. I will admit growing up with steamed and canned vegetables it took me a while to find ways that I truly enjoy eating vegetables. I created the Roasted Vegetables Cookbook to share my favorites with you!

Sweet Potato Pancakes
Serves 2
Ingredients
½ cup roasted sweet potatoes, skin removed
1/2 banana
2 eggs
¼ cup milk of choice
2 Tbsp. ground flax
½ cup oat or coconut flour
1 tsp. baking soda
1 tsp. pure vanilla extract
1 tsp. ground cinnamon
Directions
Blend sweet potato and banana in a food processor until smooth. Add remaining ingredients and blend until combined.
Heat oil in a skillet over medium heat. Once pan is warm, spoon batter into small rounds and let cook 2-3 minutes per side. Remove pancakes from pan, set aside and repeat with remaining batter.
Serve with a dollop of yogurt, fresh fruit and seeds. You can also sweeten with maple syrup; or one of my favorites, melted peanut butter + cinnamon.
