Sweet Potato Pancakes

Sweet Potato Pancakes

Serves 2

  • ½ cup roasted sweet potatoes, skin removed

  • 1/2 banana

  • 2 eggs

  • ¼ cup milk of choice

  • 2 Tbsp. ground flax

  • ½ cup oat or coconut flour

  • 1 tsp. baking soda

  • 1 tsp. pure vanilla extract

  • 1 tsp. ground cinnamon

  1. Blend sweet potato and banana in a food processor until smooth. Add remaining ingredients and blend until combined.

  2. Heat oil in a skillet over medium heat. Once pan is warm, spoon batter into small rounds and let cook 2-3 minutes per side. Remove pancakes from pan, set aside and repeat with remaining batter.

  3. Serve with a dollop of yogurt, fresh fruit and seeds. You can also sweeten with maple syrup; or one of my favorites, melted peanut butter + cinnamon.
